Cook Together: Recipes for a Night In

Cooking at home becomes part of the experience — unhurried,
hands-on and shared.

Creamy Tagliatelle (or Hand-Rolled Pasta

You’ll need

  • 200g tagliatelle (fresh if possible)
  • 1 small shallot, finely diced
  • 1 clove garlic, crushed
  • 150ml double cream
  • Handful of spinach
  • Zest of ½ lemon
  • Parmesan, finely grated
  • Olive oil, salt & pepper

Method

  1. Cook pasta in salted water until al dente.
  2. Meanwhile, sauté shallot in olive oil until soft. Add garlic and cook briefly.
  3. Stir in cream and gently simmer for 2–3 minutes.
  4. Add spinach to wilt, lemon zest and a handful of parmesan.
  5. Toss through drained pasta, adding pasta water if needed.

Finish with extra parmesan and black pepper.

Mushroom & Parmesan Risotto

You’ll need

  • 150g risotto rice
  • 500ml hot vegetable stock
  • 200g mushrooms, sliced
  • 1 small onion or shallot, finely chopped
  • 1 clove garlic
  • 30g butter
  • Parmesan, finely grated
  • Olive oil

Method

  1. Saute mushrooms in olive oil until golden. Set aside.
  2. In the same pan, soften onion and garlic.
  3. Add rice and stir until coated.
  4. Add stock a ladle at a time, stirring until absorbed.
  5. After 18–20 minutes, stir in mushrooms, butter and parmesan.

Season well and serve creamy, not stiff.

Chocolate Fondants

You’ll need

  • 100g dark chocolate
  • 100g butter
  • 2 eggs
  • 2 egg yolks
  • 50g caster sugar
  • 1 tbsp plain flour

Method

  1. Heat oven to 200°C (fan 180°C).
  2. Melt chocolate and butter together.
  3. Whisk eggs, yolks and sugar until pale.
  4. Fold in chocolate mixture, then flour.
  5. Pour into buttered ramekins.
  6. Bake for 9–10 minutes until set outside and soft inside.

Serve immediately.

  1. Dip strawberries and place on baking paper.
  2. Chill for 10 minutes until set.

Optional: drizzle with white chocolate or sprinkle with sea salt.
